This is so easy but tastes great and your meat and cheese eating friends and family won’t even know they are eating something that is dairy and meat free. It is versatile and you could use lentils (instead of faux meat) in it and spinach if you wish. So have fun with your lasagna! Here I will stick to what we used in tonight’s version we brought to the pot luck.
Start with a 9 x 13 casserole dish or pan and lightly oil. We use PAM.
Ingredients: One can use any lasagna noodles, but we like DeBoles Rice lasagna noodles because you don’t have to boil them first. You merely lay them out in the pan or casserole dish and pop them in the oven and adding all of the ingredients. And they are gluten-free to boot.
You don’t have to use faux meat, but we do. You can use any number of the faux “meats” out there. Tonight I combined a package of Helen’s Organic Italian sausage and Trader Joe’s Beef-less Ground beef. I add a package of each to a bowl and combine before adding.
Your favorite marinara sauce…At least two jars, more if you want more sauce. I actually mixed a jar of Classico with a jar of Newman’s tonight.
Soy mozzarella cheese.
A package of Firm Tofu.
Here is THE BEST way to press the water out of freshly opened tofu. Remove the block of tofu and slice it into ½-1” slices. Then pull a clean dish towel out of the drawer and place two layers of paper towels over it. Place the slices of tofu onto the outer right or left 1/3 of the towel, then fold the towel onto the tofu and press down with your hands. I usually fold the towel in thirds to get more “soaking up” ability of the towel. Transfer the “dewatered” tofu into a large bowl and add two tablespoons of nutritional yeast, 1 teaspoon of garlic, and salt and pepper to taste. Mash it all with a fork.
Building your lasagna:
- Spoon in enough sauce to cover the bottom of the dish.
- Add and arrange a layer of noodles over the sauce.
- Sprinkle a layer of “meat” then tofu cheese over top of the meat and add sauce over that.
- Repeat step 2.
- Repeat Step 3.
- Repeat Step 2.
- Add sauce on top of the last layer of noodles and sprinkle the top with soy mozzarella (we use Daiya or Trader Joe’s brand)
Add a nice green salad, some garlic bread perhaps, and your favorite glass of Pinot Noir. Nice!
Once you do this a couple of times, you will see how fast and easy it is to do! And what a hit it is!
